Serve everything over cilantro lime rice like I do, pile it over greens, or simply grab a bowl and enjoy the beef and cheesy vegetables straight from the pan

Some of my favorite recipes are the ones that give you plenty of options without creating plenty of dishes. These Sheet Pan Chili Lime Beef Taco Bowls are exactly that : seasoned beef, colorful vegetables, and freshly grated cheese, all finished under a broiler until everything is melted and bubbling.

I serve mine over cilantro lime jasmine rice and avocado and a generous spoonful of chili lime sour cream. But the real beauty of this recipe is that the sheet pan itself is the meal. You can skip the rice entirely, serve it over greens, tuck everything into warm tortillas, or turn the leftovers into lunch the next day.

WHY YOU’LL LOVE THESE SHEET PAN TACO BOWLS

Most of dinner happens on one pan. The beef, peppers, onion and corn all cook on the same sheet pan, and the cheese melts right over the top. I personally do all the veggies on one pan and the beef on another, as I always prepare this to purposely have leftovers.

They’re easy to make your own. Rice makes them hearty and satisfying, but you don’t need it. Serve the beef and vegetables alone, over greens, or tucked into tortillas.

The sauce couldn’t be easier. Sour cream, Chili Lime Seasoning and fresh lime make a creamy finishing sauce without needing another complicated recipe.

They’re great for leftovers. Keep the cold toppings separate and you’ve got an easy lunch ready for the next few days.

WHAT YOU’LL NEED

Fajita-Style Beef

I used Wagyu fajita meat, which cooks quickly and stays incredibly tender. You don’t need Wagyu to make the recipe, though; thinly sliced sirloin, flank steak, or another beef labeled for fajitas will work. If you have time, though, I recommend letting it marinate a bit!

The important thing is the cut. Thin strips cook quickly enough that we can add them after the vegetables have had a head start in the oven.

Bell Peppers + Red Onion

Peppers and onions give that familiar fajita-style combination. Slice them fairly evenly so they soften and caramelize at roughly the same rate.

Corn

Corn adds sweetness against the chili lime seasoning and gives the finished sheet pan another layer of texture.

Fresh corn is wonderful when it’s in season, but frozen corn makes this recipe easy to keep in rotation year-round.

Redmond Chili Lime Seasoning

The seasoning does most of the heavy lifting here. I use it on both the beef and vegetables, and then add a little more to the sour cream so the same flavor carries through the entire dish.

Monterey Jack Cheese

Freshly grated Monterey Jack melts beautifully and doesn’t compete with the other flavors. Sharp cheddar or a combination of Monterey Jack and cheddar would also work.

Whenever possible, grate your cheese from the block rather than reaching for pre-shredded cheese. It melts much smoother!

Jasmine Rice

Rice is completely optional, but I love turning it into quick cilantro lime rice for the base of the bowls.

If you’re skipping the rice, nothing else about the recipe needs to change.

Sour Cream

A little sour cream mixed with Chili Lime Seasoning and fresh lime becomes the simplest creamy sauce for finishing the bowls.

HOW TO MAKE SHEET PAN BEEF TACO BOWLS

Give the Vegetables a Head Start

Preheat the oven to 425℉.

Add the sliced bell peppers, red onion, and corn to a large rimmed sheet pan. Toss with extra virgin olive oil, Redmond Chili Lime Seasoning and fresh lime zest, then spread everything into an even layer.

Roast for 12 – 15 minutes, tossing halfway through. You’re looking for vegetables that have started to soften with a little browning around the edges – they don’t need to be completely cooked yet.

Season the Beef

While the vegetables roast, toss the thinly sliced beef with extra virgin olive oil and Chili Lime Seasoning. If you are making enough for leftovers and your vegetables are taking up most of the baking sheet, arrange the beef in a single layer on a separate baking sheet.

Keeping the beef out of the oven during the first part of cooking is important. Thin fajita meat needs significantly less time than the vegetables.

Add the Beef to the Sheet Pan

Remove the sheet pan from the oven and move the vegetables toward the edges (unless you are cooking separately on two baking sheets). Arrange the seasoned beef across the center in a single layer.

Return the pan to the oven for approximately 5 -8 minutes, or until the beef reaches your preferred doneness. If you’re baking on two separate sheets, simply add the second baking sheet to the oven.

Kitchen Note : The exact cooking time will depend heavily on how thin your beef is sliced. Start checking it around five minutes rather than relying exclusively on the clock.

Add the Cheese

Pull the pan from the oven and grate Monterey Jack directly over the vegetables.

Switch the oven to broil and return the sheet pans for 1 – 2 minutes, just until the cheese is melted and bubbling with a few golden spots.

This is the step I wouldn’t skip. The melted cheese catches on the edges of the vegetables and makes the whole sheet pan feel much more like a taco bowl rather than simply roasted beef and vegetables.

Finish with Fresh Lime

As soon as the sheet pan comes out of the oven, squeeze fresh lime juice over everything.

That little hit of acidity at the end wakes up the roasted flavors and balances the richness of the beef and cheese.

Make the Cilantro Lime Rice

While everything is roasting, stir fresh lime juice, chopped cilantro and a pinch of salt into warm jasmine rice.

Keep it covered until you’re ready to build the bowls.

Make the Chili Lime Sour Cream

Stir together sour cream, Redmond Chili Lime Seasoning and fresh lime juice. Add water, a teaspoon at a time, if you’d like a thinner, more drizzleable consistency.

Taste it before adding additional seasoning. Remember, there’s already seasoning throughout the rest of the dish.

Build Your Bowl

Spoon cilantro lime rice into each bowl and add a generous serving of the cheesy chili lime beef and vegetables.

Finish with avocado, sour cream, cilantro and another squeeze of lime.

HOW TO SERVE THEM

You don’t have to serve this as a rice bowl. This is one of those recipes I want you to make work for your table. The sheet pan mixture is delicious enough to stand on its own, so think of the rice as an option rather than a requirement.

Try serving it :

  • Straight from the sheet pan with avocado and Chili Lime sour cream.
  • Over cilantro lime rice for the version pictured here.
  • Over shredded romaine for a warm taco salad.
  • Inside warm tortillas for quick steak fajitas or tacos.
  • Over cauliflower rice if you prefer to go grain free.
  • With tortilla chips and extra toppings for a sheet pan taco bowl-meets-nachos situation.

And if you’re feeding a group, put the toppings on the table and let everyone build their own. That’s often the easiest, and most fun, way to serve it.

TIPS FOR THE BEST SHEET PAN TACO BOWLS

  • Use a large enough sheet pan. Crowding is the enemy of browning. Be sure to give the vegetables and beef enough room to roast instead of steaming.
  • Don’t add the beef too early. The vegetables need a head start. Adding thinly sliced beef at the beginning would leave you with overcooked beef by the time the peppers and onions are ready.
  • Grate your own cheese. Freshly grated cheese melts more evenly and gives you that beautiful bubbly finish under the broiler.
  • Watch the broiler. One minute can make a big difference here. Stay close and pull the pan when the cheese is melted with a few browned spots.
  • Finish with acid. Don’t forget that final squeeze of lime. It’s a small detail, but it’s exactly the kind of finishing touch that makes a simple dinner taste complete.

STORAGE & REHEATING

Store leftover beef and vegetables in an airtight container in the refrigerator for up to 4 days. Store the rice and sour cream separately when possible.

For the best texture, reheat the beef and vegetables on a sheet pan or in a skillet until warmed through. The microwave works when you’re short on time, but you won’t get quite as much of that roasted texture back.

Wait to add avocado, sour cream and fresh cilantro until after reheating.

FREQUENTLY ASKED QUESTIONS

What kind of beef is best for sheet pan taco bowls?

Thinly sliced fajita-style beef works particularly well because it cooks quickly. I used Wagyu fajita meat, but sirloin, flank steak, or another thinly sliced steak can be substituted.

Do I have to serve these taco bowls with rice?

Not at all. The chili lim beef and vegetables can be eaten on their own or served over lettuce, cauliflower rice, or another grain. You can also tuck everything into tortillas.

Can I make sheet pan taco bowls ahead of time?

Yes. Prepare the beef, vegetables, and rice, and refrigerate them separately from the sour cream, avocado and other fresh toppings. Reheat the warm components just before serving. Just be sure you don’t re-heat the steak for too long, as it can get a touch dry.

Can I use a different cheese?

Yes. Monterey Jack is my favorite because of how well it melts, but cheddar, pepper jack, or a blend would all work.

Can I use chicken instead of beef?

Absolutely. Boneless, skinless chicken thighs cut into bite-sized pieces are my preferred substitution. Just adjust the cooking time and cook chicken to a safe internal temperature of 165℉.

Can I add other vegetables?

You can, but consider their cooking times. Mushrooms, poblano peppers, or sliced jalapeños would be easy additions that roast in a similar timeframe.

How do I keep the beef from getting tough?

Use thinly sliced beef, give it plenty of room on the pan and don’t overcook it. Since fajita meat cooks quickly, begin checking for doneness around the five-minute mark.

A HOSTING TIP FROM MY KITCHEN

If you’re serving these for a casual dinner with friends, don’t assemble everyone’s bowls ahead of time.

Bring the hot sheet pan(s) to the table alongside a bowl of cilantro lime rice and smaller bowls filled with avocado, cilantro, lime wedges, and Chili Lime sour cream. Everyone can build exactly what they want, and you aren’t stuck plating individual dinners while everyone else is already at the table.

It’s easy, generous and interactive – the kind of meal that lets the host actually sit down and enjoy it, too.

Description

Tender chili lime beef, roasted peppers, red onion, and corn are finished with melted Monterey Jack and served with cilantro lime rice and creamy chili lime sour cream. These easy sheet pan beef taco bowls are colorful, customizable and made with minimal cleanup. 


Ingredients

Beef + Vegetables

  • 680 grams (1 1/2 pounds) thinly sliced fajita-style beef
  • 300 grams (2 medium) bell peppers, thinly sliced
  • 150 grams (1 large) red onion, thinly sliced
  • 165 grams (1 1/2 cups) corn, fresh or frozen
  • 30 milliliters (2 tablespoons) extra virgin olive oil, divided
  • 18 – 27 grams (2 – 3 tablespoons) Redmond Chili Lime Seasoning, divided*
  • Zest of 1 lime
  • 120 grams (1 cup) freshly shredded Monterey Jack cheese
  • 30 milliliters (2 tablespoons) fresh lime juice 

Cilantro Lime Rice

  • 370 grams (2 cups) cooked jasmine rice
  • 15 milliliters (1 tablespoon) fresh lime juice
  • 8 grams (2 tablespoons) finely chopped fresh cilantro
  • 1 gram (1/8 teaspoon) fine sea salt

Chili Lime Sour Cream

  • 120 grams (1/2 cup) sour cream
  • 3 – 6 grams (1 – 2 teaspoons) Redmond Chili Lime Seasoning*
  • 15 milliliters (1 tablespoon) fresh lime juice
  • 5 – 10 milliliters (1 – 2 teaspoons) water, if needed

For Serving

  • 1 avocado, sliced
  • Fresh cilantro, as desired
  • Lime wedges, as desired 

Instructions

  1. Preheat. Preheat oven to 425℉. 
  2. Prepare the Vegetables. Add peppers, red onion and corn to a rimmed sheet pan lined with parchment paper. Toss with 1 1/2 tablespoons extra virgin olive oil, 1 tablespoon Chili Lime Seasoning and lime zest. Spread into an even layer. 
  3. Roast. Roast for 12 – 15 minutes, tossing halfway through, until the peppers and onions have begun to soften and brown around the edges. 
  4. Season the Beef. Toss beef with remaining 1/2 tablespoon extra virgin olive oil and 1 – 1 1/2 tablespoons Chili Lime Seasoning. 
  5. Add the Beef. Move the vegetables toward the edges of the sheet pan. Arrange beef in a single layer in the center. Roast for 5 – 8 minutes, checking around five minutes, until the beef reaches your preferred doneness. As a reminder, if you are making more than the recipe calls for, you may want to do the vegetables on one sheet pan and the beef on a second. 
  6. Add Cheese. Sprinkle freshly grated Monterey Jack over the vegetables. Switch the oven to broil and broil for 1 – 2 minutes, or until the cheese is melted, bubbling, and lightly golden in spots. 
  7. Finish. Remove from the oven and immediately squeeze fresh lime juice over the sheet pan. 
  8. Prepare the Rice. Stir lime juice, cilantro, and salt into the warm jasmine rice. 
  9. Make the Sauce. Combine sour cream, chili lime seasoning, and lime juice. Thin with water, one teaspoon at a time, if desired.
  10. Assemble. Divide rice among four bowls. Top with beef and vegetables, sliced avocado, Chili Lime sour cream, cilantro and lime wedges. Serve immediately. 

Notes

  • Wagyu fajita meat was used to develop the recipe, but thinly sliced sirloin, flank steak or another fajita-style beef works. 
  • Beef thickness varies considerably, so use cooking time as a guide and check the meat early. 
  • Rice is optional. Serve the beef and vegetables alone, over greens, with cauliflower rice or tucked into tortillas. 
  • Monterey Jack can be replaced with cheddar, pepper Jack or a combination. 
  • Fresh or frozen corn works; frozen corn does not need to be thawed first. 
  • Avoid overcrowding the pan or the vegetables and beef will steam rather than develop browned edges. 
  • Refrigerate leftovers for up to 4 days, keeping fresh toppings and sour cream separate.
