Each mini bite is rich, chocolatey, and topped with a perfectly toasted marshmallow and a sprinkle of crushed graham crackers for that nostalgic campfire feel (no fire pit required). They’re bite-sized, party-friendly, and always a hit when you want to serve something playful yet indulgent.

INGREDIENTS

  • 1/2 cup butter infused olive oil (or grass-fed butter)
  • 1/2 cup coconut sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup almond flour (or gluten-free 1:1 flour)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon baking soda
  • 1/2 cup mini chocolate chips
  • 12 large marshmallows, halved (I recommend Good Mallow)
  • 1/4 cup crushed graham crackers (for topping)

EQUIPMENT

  • Mini muffin tin
  • Saucepan
  • Mixing bowl + whisk
  • Spatula

STEP-BY-STEP INSTRUCTIONS

  1. Preheat Oven : Heat oven to 350°. Grease or line a mini muffin tin.
  2. Melt Butter : In a saucepan over low heat, melt butter. Remove from heat and stir in sugar, eggs, and vanilla.
  3. Make Batter : Add cocoa powder, almond flour, salt, and baking soda. Stir until just combined. Fold in chocolate chips.
  4. Fill Muffin Tin : Spoon batter into cups about 3/4 full.
  5. Bake : Bake for 10 – 12 minutes, until set but fudgy.
  6. Add Marshmallows : Top each bite with a marshmallow half. Broil for 1 – 2 minutes until marshmallows are golden and toasty.
  7. Finish with Crunch : Sprinkle crushed graham crackers over each toasted marshmallow just before serving.
  8. Optional Torch : Use a kitchen torch for a more dramatic finish.

STORAGE TIPS

  • Refrigerator : Store in an airtight container for up to 4 days.
  • Freezer : Freeze baked (without marshmallow and graham cracker topping) for up to 1 month. Add toppings before serving.
  • Make Ahead : Bake brownie bites in advance, then add marshmallow, broil, and graham crackers just before serving.
