With rosemary infused olive oil, a touch of sea salt, and your favorite mix of nuts, it’s the kind of thing that makes your guests feel like you thought of every last detail, without it taking more than 20 minutes.

INGREDIENTS
4 cups of raw mixed nuts (almonds, cashews, pecans, walnuts, pistachios, macadamia nuts, etc.)
Preheat your oven to 400°F and line a sheet pan with parchment paper.
Mix all ingredients in a large bowl until everything is evenly coated.
Spread nuts out in an even layer on the pan.
Bake for 15 – 20 minutes, tossing halfway if needed (if you don’t have a convection oven).
Cool completely, then sprinkle with fresh rosemary (or other herbs) if using. Store or serve!

STORAGE TIPS
Once cooled, store the nut mix in an airtight container at room temperature for up to one week. These also make great gifts – pour into a jar or bakery box with a sprig of rosemary and a ribbon.
FREQUENTLY ASKED QUESTIONS
Can I use roasted or salted nuts?
Stick to raw, unsalted nuts to avoid burning or overly salted / oiled results. You’re building flavor from scratch. I also highly recommend never purchasing nuts that already have been cooking in oil, as it is likely a seed oil that was used.
Do I need rosemary olive oil?
For this particular variation, it’s ideal, but if you don’t have it, use a high-quality extra virgin olive oil and toss in fresh rosemary while the nuts are still warm.
Can I make these ahead of time?
Absolutely. These keep beautifully and are a perfect make-ahead snack for gatherings of all kinds!
