The sweet potato “buns” hold tender pulled pork with a barbecue sauce of your choice, making them a little bit indulgent (as game-day should be). INGREDIENTS

  • 2 – 3 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons extra virgin olive oil or avocado oil
  • sea salt
  • 2 cups cooked and shredded pulled pork
  • 1/2 cup barbecue sauce of choice
  • optional toppings : fresh herbs, jalapeño slices, slaw, or even pickled onions

EQUIPMENT

  • Sharp knife or mandoline slicer
  • Baking sheet lined with parchment
  • Small saucepan for warming BBQ sauce
  • Tongs or spatula for assembly

STEP-BY-STEP INSTRUCTIONS

  1. Prep the Sweet Potatoes : Preheat oven to 400°F. Slice sweet potatoes into even 1/2 inch rounds and toss with oil and sea salt. Spread evenly on a lined baking sheet.
  2. Roast : Bake for 25 – 30 minutes, flipping halfway through, until golden and tender but still sturdy enough to hold toppings.
  3. Warm the Pork : While the potatoes roast, warm pulled pork in a skillet or saucepan with barbecue sauce until heated through.
  4. Assemble Sliders : Top each sweet potato with pulled pork. Drizzle with extra BBQ sauce and add optional toppings like herbs or pickled onions. Serve warm.

STORAGE & REHEATING TIPS

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat sweet potato rounds in a 350°F oven until warm, then top with reheated pulled pork.
  • Best served fresh, but the pork mixture can be made 1 – 2 days ahead for easier party prep.

Yes! Roast the sweet potatoes and cook the pulled pork in advance. Assemble just before serving to keep them from getting soggy.

What’s the best pulled pork to use?

Any leftover pulled pork works. Slow cooker, smoked, oven-roasted, or even from your favorite local BBQ spot! Just make sure it’s tender and juicy.

Can I swap the meat?

Definitely. Try shredded chicken, brisket, or even a plant-based BBQ jackfruit for a vegetarian twist.

How can I keep them warm for a party?

Store the pulled pork in a slow cooker on “warm” and reheat sweet potatoes on trays just before serving. You could also arrange the sweet potato medallions on a platter next to the slow cooker and have those served at room temperature so you’re not manning the oven while your guests are there.

Description

Bite-sized sliders made with roasted sweet potato “buns,” topped with tender pulled pork and barbecue sauce. Perfect for game day or entertaining.


Ingredients

  • 4 sweet potatoes, try to find long potatoes that are similar width from end to end
  • 3 tablespoons of ghee (melted) or extra virgin olive oil
  • 1 teaspoon sea salt


Instructions

  1. Prep the Sweet Potatoes : Preheat oven to 400°F. Slice sweet potatoes into even 1/2 inch rounds and toss with melted ghee/oil and sea salt. Spread evenly on a lined baking sheet.
  2. Roast : Bake for 25 – 30 minutes, flipping halfway through, until golden and tender but still sturdy enough to hold toppings.
  3. Warm the Pork : While the potatoes roast, warm pulled pork in a skillet or saucepan with barbecue sauce until heated through (unless you want to serve with a trio of sauces, just warm the pulled pork).
