This cozy and nourishing Healthy Apple Pie Collagen Latte is everything you love about fall in one frothy mug : sweet apple pie spice, rich shaken espresso, and a protein-boosting blend of collagen and vanilla protein. It’s quick to make, wholesome, and feels like a barista-style drink you can whip up at home in under 5 minutes.
Fall mornings call for something special, and this latte is one of my go-to favorites. It tastes indulgent, like a slice of warm apple pie, but is made with nourishing ingredients that support your body. The combination of collagen and protein gives this drink staying power, while a touch of maple syrup keeps it naturally sweet. If you love the idea of cozying up with a seasonal latte (hot or iced) that also fits your wellness goals, this one’s for you.
INGREDIENTS
Espresso – A double shot shaken with ice for that smooth café taste and delicious froth.
Milk – Use your favorite (we get local whole milk and I prefer that for creaminess)
Vanilla Protein Powder – Adds flavor and a boost of protein (we use Equip Foods)
Collagen Powder – Supports skin, hair, and joint health. I use Paris Laundry’s Ocean Radiance.
Maple Syrup – A natural sweetener that pairs beautifully with apple pie spice.
Apple Pie Spice – A blend of cinnamon, nutmeg, allspice, clove, and ginger.
EQUIPMENT
Espresso machine or stovetop espresso maker
Blender for frothing
Cocktail shaker or mason jar with lid (to shake espresso with ice)
STEP-BY-STEP INSTRUCTIONS
Brew Espresso : Pull a double shot.
Shake to Chill : Combine hot espresso with ice in a shaker or mason jar with lid. Shake for 30 seconds until chilled and frothy.
Blend the Creamer : In a blender, mix milk, protein powder, collagen, maple syrup, and apple pie spice until creamy and foamy.
Assemble : Pour shaken espresso into a glass with ice, top with the apple pie creamer, stir, and enjoy!
STORAGE TIPS
Best enjoyed fresh. Latte’s don’t hold up well once assembled.
You can prep the creamer (milk + protein + collagen + maple syrup + spice) in advance. Store in a sealed jar in the refrigerator for up to 2 days. Shake or blend again before using.

Can I make this latte without espresso?
Yes! Brew strong coffee or use cold brew as a substitute.
What type of protein powder works best?
A vanilla protein powder blends smoothly and keeps the flavor balanced. Unflavored protein will work, but you may want to add extra maple syrup.
Can I make it hot instead of iced?
Absolutely. Skip the ice and whisk the espresso and creamer together while both are warm. You can also simply pour this into a cup of freshly brewed drip coffee.
Is this recipe dairy-free?
Yes, just be sure you use a dairy-free milk option. Do note that I make this with whole milk, so the consistency might not be as thick and creamy if using a dairy-free alternative.
Does collagen affect the flavor?
No. Collagen dissolves easily and adds creaminess without altering the flavor. That said, I am using an unflavored collagen. I do not recommend using a flavored collagen for this recipe.

1 scoop vanilla protein powder (my preference : Equip Foods)
Use your favorite milk; however, note that dairy-free milk alternatives might not be as thick and creamy as using whole milk.
For a hot version, skip the ice and simply whisk or stir to combine.
Prep creamer up to 2 days ahead and store in the fridge.
