  • 2 tablespoons maple syrup
  • 2 teaspoons vanilla extract
  • 1 cup gluten free flour
  • 1 cup almond flour
  • 1/3 cup coconut sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon sea salt

Equipment Overview

  • 8 x 8 inch square baking pan
  • Parchment Paper (unbleached recommended)
  • Stand or handheld mixer
  • Two mixing bowls (one large, one small)

Step-By-Step Instructions

  1. Preheat the oven to 350°F. Line an 8 x 8 baking dish with parchment paper or grease with coconut or avocado oil spray.
  2. Make the Streusel : In a small mixing bowl, combine all streusel ingredients until the texture resembles wet sand. Place in the fridge to chill while you prepare the cake batter.
  3. Mix the Batter : Add applesauce, melted butter, eggs, maple syrup, and vanilla extract to your large mixing bowl. Using a handheld mixer with the beater attachments, mix until combined. Follow by adding the gluten free flour, almond flour, coconut sugar, baking soda, nutmeg, and sea salt. Mix until combined (start on slow speed and increase). You can also combine all dry ingredients in a separate bowl and add one cup at a time. Your batter is ready with everything is well mixed and smooth.
  4. Assemble : Pour half the batter into the prepared baking pan, then layer with half the streusel. Add remaining batter, spread evenly, and top with the rest of the streusel.
