If you’re not a fan of blue cheese, try feta or goat cheese for a tangy but milder flavor. I have not done this so I cannot speak to the flavor profile but these would be the two cheeses that provide that tang without the traditional robust flavor of blue cheese.

Slice a tiny sliver off the bottom of each egg white half so they sit flat, or arrange on a bed of salad greens.
