WELCOME!

A light, citrus-forward spritz designed for slow afternoons and beautifully set tables. This Elegant Honey Lemon French Spritz brings together fresh ingredients for a drink that feels both effortless and refined. A light champagne cocktail for spring hosting, aperitif hour, or welcoming guests with something refreshing in hand.

There’s a certain kind of drink that sets the tone before the first course ever hits the table. Something simple, intentional, and just refined enough to feel special without being complicated.

This Champagne cocktail is exactly that. It’s bright, lightly sweet, and finished with bubbles, making it ideal for gatherings where you want to keep things easy, but still thoughtful.

This Elegant Honey Lemon French Spritz was part of A Night in the French Countryside Dinner, designed to welcome guests in with something refreshing, seasonal, and quietly elegant.

INGREDIENTS

  • 1 bottle chilled sparkling wine (recommended : Champagne or Crémant)

  • Citrus juicer
  • Bar spoon or whisk
  • Champagne flutes, coupes, or wine glasses

  1. Make the Honey Syrup. In a small saucepan, gently warm the honey with 2 – 3 tablespoons of water. Stir until fully dissolved, then remove from heat and allow to cool completely.
  2. Build the Base. In a pitcher, combine the fresh lemon juice and cooled honey syrup. Whisk in the lemon olive oil until fully incorporated.
  3. Assemble the Spritz. Pour about 2 ounces of the lemon-honey base into each glass. Top with chilled sparkling wine / champagne.
  4. Garnish and Serve. Finish with a fresh lemon peel. Serve immediately while the bubbles are crisp and lively.

CHEF TIPS FOR THE BEST SPRITZ

  • Use freshly squeezed lemon juice for the cleanest flavor
  • Chill everything ahead of time – this keeps the drink bright and balanced
  • Add the sparkling wine just before serving to preserve carbonation
  • Adjust honey slightly depending on the sweetness of your wine

HOSTING TIPS

When serving this for guests, pre-mix the lemon-honey base ahead of time and keep it chilled. As guests arrive, simply pour and top with sparkling wine. It creates a seamless, welcoming moment without pulling you away from the room.

STORAGE TIPS

  • The lemon-honey base can be made up to 2 days in advance and stored in the refrigerator.
  • Do not mix with sparkling wine until ready to serve.
  • Stir before using, as natural separation may occur.

FREQUENTLY ASKED QUESTIONS

Can I make this ahead of time?

What’s the best sparkling wine to use?

Champagne or Crémant work beautifully, but any dry sparkling wine will do. Look for something crisp rather than overly sweet.

You can substitute with a high-quality sparkling water or non-alcoholic sparkling wine for a similar effect.

What does the lemon olive oil do?

It adds a subtle roundness and depth, enhancing the citrus without overpowering the drink.
