Build the Base. In a pitcher, combine the fresh lemon juice and cooled honey syrup. Whisk in the lemon olive oil until fully incorporated.
Assemble the Spritz. Pour about 2 ounces of the lemon-honey base into each glass. Top with chilled sparkling wine / champagne.
