These no-bake protein bites are the perfect mix of chewy, nutty, and sweet – with just the right crunch from the chocolate chips. They’re made with almond flour, peanut butter, and your favorite vanilla or peanut butter protein powder for a snack that delivers on flavor and energy. Make them ahead, freeze them for later, or double the batch (highly recommend!) – you won’t regret it.

Ingredients You’ll Need

  • 1 cup almond flour
  • 1/2 cup peanut butter (or nut butter of choice)
  • 2 scoops vanilla or peanut butter protein powder (my preference : Equip Foods Vanilla or Peanut Butter Grass-Fed Protein)
  • 4 tablespoons coconut oil, melted
  • 4 tablespoons maple syrup
  • 1/2 cup dark chocolate chips
  • 1/2 cup shredded coconut
  • 2 teaspoons vanilla extract

Step-By-Step Instructions

  1. Mix the Ingredients : In a large bowl, combine almond flour, peanut butter, protein powder, melted coconut oil, maple syrup, and vanilla extract. Stir until smooth and evenly combined.
  2. Fold in the Fun : Gently mix in the chocolate chips and shredded coconut until full incorporated.
  3. Scoop and Shape : Use a small cookie scoop (or your hands) to form into golf ball-sized bites. Place each bite on a baking sheet or plate lined with parchment.
  4. Chill to Set : Refrigerate the bites for at least 30 minutes to firm up. Once chilled, transfer to a storage container and keep cold until ready to enjoy.

Storage Tips

  • Store in the refrigerator for up to 7 days in an airtight container.
  • For longer storage (trust me, you won’t need this – they won’t last), freeze bites for up to 3 months and thaw as needed.
  • Tip : Store them in a reusable silicone bag for grab-and-go snacking!

Frequently Asked Questions

Can I use a different nut butter?

Absolutely! Just be sure to use a brand that only contains 1 – 2 ingredients – the nut and sea salt!

Do I have to use protein powder?

Nope! If you want to skip the protein, just substitute with a little extra almond flour until the consistency is scoopable.

Can I make these without coconut?

Yes – simply omit the shredded coconut.

What kind of chocolate chips do you recommend?

I have used them all – mini chocolate chips, baking chips, regular chocolate chips, and I have even roughly chopped a chocolate bar I already had in the pantry.
