SALAD
- 2 cups cooked and cooled quinoa
- 1 cup fresh raspberries
- 1 cup fresh blackberries
- 1 cup fresh blueberries
- 2 tablespoons fresh mint, roughly chopped
- 1/4 cup crumbled feta
- 1/4 cup dry roasted and shelled pistachios
CITRUS HONEY DRESSING
- 1 teaspoon orange zest
- 4 tablespoons fresh orange juice
- 2 tablespoons fresh lemon juice
- 1 tablespoon fresh lime juice
- 1 tablespoon honey
Instructions
- Prepare the Dressing. Add the orange zest, orange juice, lemon juice, lime juice, and honey to a mason jar. Shake vigorously until combined.
- Build the Salad. In a large bowl, combine the cooled quinoa, raspberries, blackberries, blueberries, chopped mint, feta cheese, and pistachios.
- Toss and Serve. Pour the dressing over the salad and gently toss until everything is evenly coated. Be careful not to crush the berries.
- Garnish. Top with additional mint leaves, berries, feta, or pistachios before serving.
