Homemade Peanut Butter Trail Mix with Maple & Sea Salt

Description

Sweet, salty, crunchy, and made with simple pantry staples, this Homemade Peanut Butter Trail Mix with Maple and Sea Salt is an easy make-ahead snack for busy weekdays, road trips, hikes, lunchboxes, or afternoon pick-me-ups. Maple-roasted nuts, crispy brown rice cereal, dark chocolate, and a finishing sprinkle of Redmond Real Salt come together for a homemade trail mix that’s even better than store-bought.

Trail Mix

  • 1 cup (120 g) raw cashews
  • 1 cup (100 g) raw pecan halves
  • 1 cup (145 g) roasted unsalted peanuts
  • 2 cups (60 g) gluten-free crispy brown rice cereal

Maple Peanut Butter Coating

  • 2 tablespoons (40 g) pure maple syrup
  • 2 tablespoons (32 g) natural creamy peanut butter
  • 1 tablespoon (14 g) melted coconut oil or ghee
  • 1 teaspoon (5 ml) pure vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon Redmond Real Salt

After Baking

  • 3/4 cup (90 g) dried cherries or dried cranberries
  • 3/4 cup (130 g) dark chocolate chunks
  • additional Redmond Real Salt, for finishing

Instructions

  1. Preheat the oven to 325℉. Line a rimmed baking sheet with parchment paper.
  2. In a large bowl, combine the cashews, pecans, peanuts, and crispy rice cereal.
  3. In a small saucepan over low heat, whisk together the maple syrup, peanut butter, coconut oil (or ghee), vanilla, cinnamon, and Redmond Real Salt until smooth.
  4. Pour the warm mixture over the dry ingredients and gently toss until evenly coated.
  5. Spread into an even layer on the prepared baking sheet.
  6. Bake for 18 – 22 minutes, stirring once halfway through, until lightly golden and fragrant.
  7. Remove from the oven and immediately sprinkle with another pinch of sea salt.
  8. Allow the mixture to cool completely on the baking sheet without stirring.
  9. Break apart any clusters, then stir in the dried cherries and dark chocolate.
  10. Serve immediately or store in an airtight container.

Notes

  • Let the trail mix cool completely before breaking it apart. This is what creates crunchy clusters.
  • Natural peanut butter works best because it coats the ingredients evenly.
  • If your peanut butter has separated, stir it well before measuring.
  • Store in a cool place to keep the chocolate from softening.
  • Feel free to swap the dried fruit, nuts, or chocolate based on what you have available.
  • A finishing sprinkle of Redmond Real Salt makes a noticeable difference, don’t skip it.
