Description

A simple citrus and herb marinated olive bowl made with Spanish olives, fresh herbs, and bright citrus. Perfect for entertaining, charcuterie boards, or Mediterranean-inspired appetizers.


Ingredients

Scale
  • 2 1/2 cups Spanish olives (Manzanilla + Castelvetrano mix)
  • Zest of 1 orange
  • Zest of 1 lemon
  • 2 tablespoons fresh orange juice
  • 2 tablespoons fresh lemon juice
  • 3 tablespoons extra virgin olive oil (recommended : Persian Lime Oil)
  • 1 tablespoon champagne vinegar 
  • 2 tablespoons chopped fresh parsley
  • 1 teaspoon chopped fresh thyme
  • flaky salt to taste


Instructions

  1. Combine all ingredients except for the olives and flaky sea salt in a mixing bowl.
  2. Add olives and toss until evenly coated.
  3. Cover and refrigerate for at least 4 hours, though overnight produces the best flavor.
  4. Remove from the refrigerator about 20 minutes before serving. Olives taste best when served at room temperature. Finish with flaky salt just before serving.
