Description
A simple citrus and herb marinated olive bowl made with Spanish olives, fresh herbs, and bright citrus. Perfect for entertaining, charcuterie boards, or Mediterranean-inspired appetizers.
Ingredients

- 2 1/2 cups Spanish olives (Manzanilla + Castelvetrano mix)
- Zest of 1 orange
- Zest of 1 lemon
- 2 tablespoons fresh orange juice
- 2 tablespoons fresh lemon juice
- 3 tablespoons extra virgin olive oil (recommended : Persian Lime Oil)
- 1 tablespoon champagne vinegar
- 2 tablespoons chopped fresh parsley
- 1 teaspoon chopped fresh thyme
- flaky salt to taste
Instructions
- Combine all ingredients except for the olives and flaky sea salt in a mixing bowl.
- Add olives and toss until evenly coated.
- Cover and refrigerate for at least 4 hours, though overnight produces the best flavor.
- Remove from the refrigerator about 20 minutes before serving. Olives taste best when served at room temperature. Finish with flaky salt just before serving.
