Adorable bite-sized Christmas brownies topped with fresh strawberries and homemade whipped cream. Perfect for holiday entertaining, dessert exchanges, and kid-friendly baking.
Ingredients
Brownies
- 1/2 cup butter infused olive oil (or 2/3 cup melted butter)
- 1 cup coconut sugar
- 2 teaspoons vanilla extract
- 3 large eggs
- 1/2 cup cacao powder
- 1/2 cup gluten free 1:1 baking flour
- 2/3 cup chocolate chips (dark preferred)
- 1/4 teaspoon sea salt
Whipped Cream
- 1 cup (8 ounces) heavy whipping cream*
- 2 – 3 tablespoons powdered sugar or 1 tablespoon maple syrup (to help stabilize)
- 1/2 teaspoon vanilla extract
Santa Hats
- 1 batch of homemade whipped cream
- 15 – 20 strawberries, tops removed and pat dry
- piping bag or zip-top bag
*You can also substitute with a vanilla icing (recommended : Simple Mills)
Instructions
BAKE THE BROWNIES
- Preheat the oven to 350℉ and line an 8×8 pan with parchment.
- Whisk melted butter, sugar, and vanilla.
- Add eggs one at a time, mixing until smooth.
- Stir in cocoa powder, flour, and salt. Fold in chocolate chips.
- Spread batter evenly in the pan (it will be thick).
- Bake 25 – 30 minutes, or until a toothpick comes out clean.
- Cool completely – this is essential for clean cuts.
MAKE THE WHIPPED CREAM
- Beat heavy cream, vanilla, and maple syrup/powdered sugar until thick, fluffy peaks form.
- Chill until ready to use.
ASSEMBLE THE SANTA BROWNIE BITES
- Cut cooled brownies into small circles using a cutter or measuring cup.
- Pipe a small swirl of whipped cream onto each brownie
- Gently press a strawberry (cut-side down) onto the cream.
- Add a tiny dollop of cream on top of the strawberry “hat”.
