Description
This savory roasted nut mix is tossed in rosemary olive oil and sea salt, then baked until golden and crisp. Perfect for entertaining, snacking, or gifting.
Ingredients

- 4 cups of raw mixed nuts (almonds, cashews, pecans, walnuts, pistachios, macadamia nuts, etc.)
- 2 – 3 tablespoons of rosemary fused olive oil (or regular extra virgin olive oil + fresh rosemary)
- 1 – 2 teaspoons of sea salt
- optional : additional herbs for garnish
Instructions
- Preheat your oven to 400°F and line a sheet pan with parchment paper.
- Mix all ingredients in a large bowl until everything is evenly coated.
- Spread nuts out in an even layer on the pan.
- Bake for 18 minutes, tossing halfway through if needed (if you don’t have a convection oven). They are ready when they are slightly browning and you can smell the aroma of toasted nuts.
- Cool completely, then sprinkle with fresh rosemary (or other herbs) if using. Store or serve!
