Description

This savory roasted nut mix is tossed in rosemary olive oil and sea salt, then baked until golden and crisp. Perfect for entertaining, snacking, or gifting.


Ingredients

Scale
  • 4 cups of raw mixed nuts (almonds, cashews, pecans, walnuts, pistachios, macadamia nuts, etc.)
  • 2 – 3 tablespoons of rosemary fused olive oil (or regular extra virgin olive oil + fresh rosemary)
  • 1 – 2 teaspoons of sea salt
  • optional : additional herbs for garnish


Instructions

  1. Preheat your oven to 400°F and line a sheet pan with parchment paper.
  2. Mix all ingredients in a large bowl until everything is evenly coated.
  3. Spread nuts out in an even layer on the pan.
  4. Bake for 18 minutes, tossing halfway through if needed (if you don’t have a convection oven). They are ready when they are slightly browning and you can smell the aroma of toasted nuts.
  5. Cool completely, then sprinkle with fresh rosemary (or other herbs) if using. Store or serve!

Notes

  • Use any nut blend you love – just make sure they’re raw and unsalted.
