Description

Bite-sized sliders made with roasted sweet potato “buns,” topped with tender pulled pork and barbecue sauce. Perfect for game day or entertaining.


Ingredients

  • 4 sweet potatoes, try to find long potatoes that are similar width from end to end
  • 3 tablespoons of ghee (melted) or extra virgin olive oil
  • 1 teaspoon sea salt


Instructions

  1. Prep the Sweet Potatoes : Preheat oven to 400°F. Slice sweet potatoes into even 1/2 inch rounds and toss with melted ghee/oil and sea salt. Spread evenly on a lined baking sheet.
  2. Roast : Bake for 25 – 30 minutes, flipping halfway through, until golden and tender but still sturdy enough to hold toppings.
  3. Warm the Pork : While the potatoes roast, warm pulled pork in a skillet or saucepan with barbecue sauce until heated through (unless you want to serve with a trio of sauces, just warm the pulled pork).
  4. Assemble Sliders : Top each sweet potato with pulled pork. Drizzle with extra BBQ sauce and add optional toppings like herbs or pickled onions. Serve warm.

Notes

  • Serve with a trio of barbecue sauces so your guests can “build their own”.
  • Use a mandolin for evenly sliced sweet potatoes
  • Try topping with jalapeños, coleslaw, or pickled onions for variety.
  • Pulled pork can be made ahead for quick assembly.
  • Note that the final number of sliders you can make depends on how many 1/2 inch rounds you get from each sweet potato.
