Description
A classic French bistro salad made with tender greens, shallots, and a balanced Dijon vinaigrette. Light, fresh, and perfect as an elegant starter for entertaining.

Salad
- 5 – 6 cups tender greens (butter lettuce, frisée, or mixed)
- 1 small shallot, finely minced
Dressing
- 1 tablespoon Dijon mustard (my recommendation : Edmond Fallot Original Dijon Mustard)
- 2 tablespoons vinegar (red wine vinegar or premium white)
- 1 teaspoon honey
- 1/4 cup extra virgin olive oil (I love using blood orange flavored oil paired with the premium white balsamic)
- sea salt, to taste
- freshly cracked black pepper, to taste
Instructions
- In a small bowl, whisk Dijon mustard, vinegar, honey, salt, and pepper.
- Slowly stream in olive oil while whisking until emulsified.
- Add greens and shallot to a large bowl.
- Toss gently with vinaigrette just before serving.
- Serve immediately.
