Silky, rich mashed potatoes infused with garlic and extra virgin olive oil. The ultimate comfort side dish for holidays and dinner parties.
Ingredients

- 2 pounds Yukon gold potatoes, peeled & cubed
- 4 cloves of garlic, peeled
- 1/2 cup whole milk or cream, warmed
- 2 tablespoons butter-infused olive oil (sub with grass-fed butter, melted)
- 2 tablespoons wild mushroom & sage olive oil (sub with more melted butter)
- sea salt
- cracked black pepper
Instructions
- Cook the Potatoes & Garlic : Place potatoes and garlic cloves in a large pot, cover with salted water, and bring to a boil. Cook until fork-tender, approximately 15 – 20 minutes.
- Drain & Mash : Drain potatoes and garlic well. Return them to the pot. Mash until smooth using a potato masher or hand mixer.
- Add Flavor : Stir in warm milk, butter-infused olive oil, and wild mushroom & sage olive oil. Mix until creamy. Season with sea salt and cracked black pepper to your desired taste.
- Adjust Consistency : If needed, add a splash of warm milk for a looser consistency or mash in extra olive oil for more richness.
Notes
- Warm milk prevents potatoes from becoming gluey.
- Yukon golds create a buttery texture, but Russets can also be used.
- For a gourmet touch, top with a drizzle of extra virgin olive oil before serving.
