Coconut Chocolate Chip Protein Bites

Description

These no-bake coconut chocolate chip protein bites are made with almond flour, peanut butter, and a hint of maple syrup for the ultimate sweet-and-satisfying snack. Perfect for post-workout fuel or mid-afternoon cravings. 


Ingredients

  • 1 cup almond flour
  • 1/2 cup peanut butter (or nut butter of choice)
  • 2 scoops vanilla or peanut butter protein powder (I recommend Equip Foods Prime Protein
  • 4 tablespoons coconut oil, melted
  • 4 tablespoons maple syrup 
  • 1/2 cup dark chocolate chips
  • 1/2 cup shredded coconut
  • 2 teaspoons vanilla extract 


Instructions

  1. Mix the Ingredients : In a large bowl, combine almond flour, peanut butter, protein powder, melted coconut oil, maple syrup, and vanilla extract. Stir until smooth and evenly combined. 
  2. Fold in the Fun : Gently mix in the chocolate chips and shredded coconut until fully incorporated.
  3. Scoop and Shape : Use a small cookie scoop (or your hands) to form into golf ball-sized bites. Place each bite on a baking sheet or plate lined with parchment.
  4. Chill to Set : Refrigerate the bites for at least 30 minutes to firm up. Once chilled, transfer to a storage container and keep cold until ready to enjoy. 

Notes

  • Use a small cookie scoop for uniform portioning.
  • Sub almond flour with oat flour if desired. 
  • Add a pinch of sea salt to enhance flavor
