CROSTINI & TOPPINGS
- 1/2 pound pulled pork (homemade or high-quality pre-smoked)
- 8 slices baguette or sourdough, thinly sliced (gluten free if needed)
- 1/4 cup BBQ sauce (see below for a few to choose from!)
- 1/2 cup vinegar slaw (ingredients below)
- 8 dill pickle slices
QUICK VINEGAR SLAW
- 1 cup shredded cabbage (green or a mix)
- 2 tablespoons apple cider vinegar
- 1 teaspoon Dijon mustard
- 1 teaspoon honey
- salt and pepper, to taste
HOMEMADE BARBECUE SAUCES
Instructions
- Toast the Bread : Place baguette slices in a pre-heated 400°F oven until golden and crisp.
- Warm the Pork : Toss pulled pork with your choice of barbecue sauce, spread evening on a baking sheet, and put in the same oven as your bread until warmed through.
- Make the Slaw : In a bowl, whisk together vinegar, mustard, honey, salt, and pepper. Toss with shredded cabbage and let marinate at least 10 minutes.
- Assemble : Top each crostini with pulled pork, a spoonful of slaw, and a dill pickle bite. Serve warm or at room temperature.
Notes
- Use leftover pulled pork for a quick shortcut.
- Assemble just before serving for best texture.
- Optional garnish : microgreens or extra barbecue sauce.
